Sundried Tomato Tapenade


This vibrant tapenade brings together rich ingredients like sundried tomatoes, olives, capers, and anchovies, creating a flavorful spread that's both bold and savory. Finished with a drizzle of olive oil, a splash of balsamic vinegar, fresh parsley, and Parmesan cheese, it’s a deliciously balanced bite. Perfect for an appetizer, snack, or party platter, this tapenade makes a tasty addition to any spread!


Ingredients:

  • 1 ½ cups sundried tomatoes (softened)
  • 2 anchovies
  • ½ cup sliced black olives
  • 2 tsp capers
  • ¼ cup fresh parsley (plus 1 tbsp for garnish)
  • 1 tsp lemon juice
  • 1 tsp brandy
  • 1 tsp minced garlic (fresh)
  • ¼ cup shredded Parmesan (plus 1 tbsp for garnish)
  • ½ cup olive oil
  • Salt and pepper to taste

To Serve:

  • Sourdough bread
  • Baguette
  • Olive oil
  • Balsamic vinegar

Directions:

  1. Soften the tomatoes: Place sundried tomatoes in a pot and cook until they soften.

  2. Blend the tapenade: Once the tomatoes are softened, transfer them to a food processor along with the anchovies, black olives, capers, parsley, lemon juice, brandy, garlic, and shredded Parmesan.

  3. Add olive oil: Slowly drizzle in the olive oil while blending until the tapenade reaches your desired consistency.

  4. Season: Taste and season with salt and pepper as needed.

  5. Garnish: Transfer the tapenade to a serving dish and drizzle with olive oil and balsamic vinegar to taste.

  6. Finish the dish: Garnish with the remaining fresh parsley and a little extra shredded Parmesan.

Serve: Pair with slices of fresh sourdough, baguette, or your favorite bread for dipping!
