Sundried Tomato Tapenade
This vibrant tapenade brings together rich ingredients like sundried tomatoes, olives, capers, and anchovies, creating a flavorful spread that's both bold and savory. Ingredients:
1 ½ cups sundried tomatoes (softened)
2 anchovies
½ cup sliced black olives
2 tsp capers
¼ cup fresh parsley (plus 1 tbsp for garnish)
1 tsp lemon juice
1 tsp brandy
1 tsp minced garlic (fresh)
¼ cup shredded Parmesan (plus 1 tbsp for garnish)
½ cup olive oil
Salt and pepper to taste
To Serve:
Sourdough bread
Baguette
Olive oil
Balsamic vinegar
Directions:
Soften the tomatoes: Place sundried tomatoes in a pot and cook until they soften.
Blend the tapenade: Once the tomatoes are softened, transfer them to a food processor along with the anchovies, black olives, capers, parsley, lemon juice, brandy, garlic, and shredded Parmesan.
Add olive oil: Slowly drizzle in the olive oil while blending until the tapenade reaches your desired consistency.
Season: Taste and season with salt and pepper as needed.
Garnish: Transfer the tapenade to a serving dish and drizzle with olive oil and balsamic vinegar to taste.
Finish the dish: Garnish with the remaining fresh parsley and a little extra shredded Parmesan.
