Ingredients:
1 cup all-purpose flour
1 tsp sugar
¼ tsp salt
3 large eggs
2 cups milk
2 tbsp melted butter
Fresh raspberries or your favourite berries (for filling)
Chocolate sauce (for drizzling)
Whipped cream (optional)
Butter and maple syrup (optional, for plain crepes)
Instructions:
Prepare the dry ingredients: In a small bowl, sift together the flour, sugar, and salt.
Mix the wet ingredients: In a large bowl, beat the eggs and milk together with an electric mixer until smooth and fully combined.
Combine wet and dry ingredients: Gradually add the sifted dry ingredients to the egg mixture, mixing until you have a smooth batter.
Stir in the butter: Add the melted butter and stir until fully incorporated.
Heat the pan: Lightly grease a crepe pan or nonstick skillet and heat over medium heat.
Cook the crepes: Pour about 4 tbsp of batter into the pan. Tilt and rotate the pan to spread the batter thin and evenly.
Flip the crepes: Cook until the edges start to brown, then flip and cook the other side for 1-2 minutes until golden.
Repeat: Continue with the remaining batter, greasing the pan as needed.
To Serve:
For raspberry-filled crepes, place a few fresh raspberries in the center of each crepe, roll them up, and drizzle with chocolate sauce. Top with a dollop of whipped cream for extra indulgence.
If you prefer a simple option, serve the crepes plain with butter and maple syrup.
