Strawberry Goat Cheese Salad


This Arugula, Strawberry, and Goat Cheese Salad combines sweet, tangy, and nutty flavors, making it a light yet flavorful dish perfect for any meal!


Ingredients:

  • 140g goat cheese

  • 145g arugula

  • 50g slivered almonds

  • 200g strawberries, sliced

  • Olive oil

  • Balsamic reduction

  • Salt and pepper to taste

Directions:

  1. Toast Almonds:

    • Preheat your oven to 400°F (200°C).

    • Spread slivered almonds on a sheet pan and toast in the oven for 5–7 minutes, or until lightly golden brown. Set aside to cool.

  2. Bake Goat Cheese:

    • On a parchment-lined sheet pan, crumble the goat cheese and bake at 400°F for 10–15 minutes, or until it becomes lightly golden.

  3. Assemble the Salad:

    • In a large salad bowl, add the arugula as the base.

    • Layer on the sliced strawberries, toasted almonds, and baked goat cheese.

  4. Dress the Salad:

    • Just before serving, drizzle the salad with olive oil and balsamic reduction.

    • Season with salt and pepper to taste.
