Strawberry Goat Cheese Salad
Ingredients:
140g goat cheese
145g arugula
50g slivered almonds
200g strawberries, sliced
Olive oil
Balsamic reduction
Salt and pepper to taste
Directions:
Toast Almonds:
Preheat your oven to 400°F (200°C).
Spread slivered almonds on a sheet pan and toast in the oven for 5–7 minutes, or until lightly golden brown. Set aside to cool.
Bake Goat Cheese:
On a parchment-lined sheet pan, crumble the goat cheese and bake at 400°F for 10–15 minutes, or until it becomes lightly golden.
Assemble the Salad:
In a large salad bowl, add the arugula as the base.
Layer on the sliced strawberries, toasted almonds, and baked goat cheese.
Dress the Salad:
Just before serving, drizzle the salad with olive oil and balsamic reduction.
Season with salt and pepper to taste.
