Hodge Podge


Warm up with this classic hodge podge recipe that everyone in your family will enjoy!


Ingredients:

  • ½ lb green beans, trimmed

  • 1 lb baby potatoes, halved

  • ¾ lb carrots, peeled and sliced

  • ¾ lb turnip, peeled and diced

  • ½ lb parsnip, peeled and sliced

  • 3 tbsp butter

  • 2 cups cream

  • 2 cups water

  • 1 tbsp garlic, minced

  • Salt and pepper, to taste

  • 1 tbsp fresh parsley, chopped

  • 1 tbsp fresh chives, chopped

Directions:

  1. Sauté the Aromatics: In a large pot, melt the butter over medium heat. Add the garlic and sauté for 2-3 minutes until fragrant.

  2. Cook the Root Vegetables: Add the carrots, baby potatoes, turnip, and parsnip to the pot. Stir to coat the vegetables in the butter and garlic. Pour in the cream and water, then bring to a simmer.

  3. Simmer & Add Beans: Let the vegetables cook until they are about ¾ done, around 10-15 minutes. Add the green beans and continue simmering until all the vegetables are tender.

  4. Season & Finish: Season the dish with salt and pepper to taste. Stir in the fresh parsley and chives just before serving.

  5. Serve: Serve the creamy vegetable medley warm, and enjoy!
