Gougere Puffs
Ingredients:
8 tbsps butter
¼ tsp salt
1 cup flour
4 eggs
1 cup gruyere cheese, grated
1 ½ tbsp parsley, chopped
1 ½ tbsp dill, chopped
1 tbsp chives, chopped
1 cup water
Directions:
1. In a saucepan combine butter, salt and water.
2. Bring to a boil. Take off heat, add the flour all at once and beat well with a wooden spoon until the flour is incorporated.
3. Return to moderate heat and cook until the dough becomes quite stiff and pulls away from the sides of the pan.
4. Remove from heat again and beat in eggs one at a time. Stir in cheese and herbs.
5. Pipe onto baking sheet. Bake in a 425 degree oven for 25-30 minutes or until puffed and golden brown.
