Chili Lime Prawns


For the ultimate prawn lover is this quick and flavourful dish, pair with your favourite rice!


Ingredients:

  • 400g tiger prawns, peeled and deveined

  • 1g kaffir lime leaves (fresh or dried)

  • ⅓ cup coconut milk

  • ¼ cup sweet chili sauce

  • 25g onion, diced

  • 5g garlic, minced

  • 1 tsp lime juice

  • Salt & pepper, to taste

Directions:

  1. Sauté the Aromatics: In a pan, sauté the diced onion and minced garlic over medium heat until softened, about 2-3 minutes. Add the lime juice to deglaze the pan, stirring to combine.

  2. Cook the Prawns: Add the prawns to the pan and cook until they turn pink, about 3-4 minutes.

  3. Add the Sauce: Stir in the sweet chili sauce, coconut milk, and kaffir lime leaves. Let everything simmer together, cooking until the prawns are fully cooked and the sauce has thickened slightly.

  4. Season: Taste and season with salt and pepper as needed. If the sauce is too spicy, balance it out by adding a little more coconut milk and lime juice.

  5. Serve: Once the prawns are cooked through and the sauce has thickened, serve immediately with rice or your favorite side.
