Chili Lime Prawns
For the ultimate prawn lover is this quick and flavourful dish, pair with your favourite rice!
Ingredients:
400g tiger prawns, peeled and deveined
1g kaffir lime leaves (fresh or dried)
⅓ cup coconut milk
¼ cup sweet chili sauce
25g onion, diced
5g garlic, minced
1 tsp lime juice
Salt & pepper, to taste
Directions:
Sauté the Aromatics: In a pan, sauté the diced onion and minced garlic over medium heat until softened, about 2-3 minutes. Add the lime juice to deglaze the pan, stirring to combine.
Cook the Prawns: Add the prawns to the pan and cook until they turn pink, about 3-4 minutes.
Add the Sauce: Stir in the sweet chili sauce, coconut milk, and kaffir lime leaves. Let everything simmer together, cooking until the prawns are fully cooked and the sauce has thickened slightly.
Season: Taste and season with salt and pepper as needed. If the sauce is too spicy, balance it out by adding a little more coconut milk and lime juice.
Serve: Once the prawns are cooked through and the sauce has thickened, serve immediately with rice or your favorite side.
