French Onion Soup


A comforting classic soup that is the perfect mix of rich, savoury, and cheesy goodness!



Ingredients:

  • 800g Spanish onion, thinly sliced

  • 2L beef stock

  • 250ml dark beer

  • 50g tomato paste

  • 2g paprika

  • 250ml red wine

  • 30ml Worcestershire sauce

  • 2 bay leaves

  • 1g dried thyme

  • Salt and pepper to taste

  • Gruyère or Swiss cheese (shredded)

  • Crostini (toasted slices of baguette)

  • Oil for sautéing

Instructions:

  1. Sauté the Onions

    • Heat oil in a large pot over medium heat. Add sliced onions and sauté until golden brown, stirring often to prevent sticking.

    • If the onions stick to the bottom, deglaze the pan with a splash of red wine, scraping up the browned bits.

  2. Build the Flavor

    • Stir in paprika, tomato paste, and thyme until well combined.

    • Deglaze with the remaining red wine, then add the beef stock, dark beer, Worcestershire sauce, bay leaves, salt, and pepper.

  3. Simmer

    • Bring the mixture to a boil, then reduce heat to medium-low. Simmer for 20 minutes to allow the flavors to meld.

    • Taste and adjust seasoning if necessary.

  4. Assemble and Broil

    • Preheat your oven's broiler. Ladle the soup into oven-safe bowls, filling them ¾ of the way.

    • Place a crostini or two on top of each bowl, then generously sprinkle with shredded Gruyère or Swiss cheese.

  5. Broil

    • Place the bowls under the broiler and cook until the cheese is melted and golden brown.

  6. Serve

    • Carefully remove from the oven and serve immediately. Pair with extra crostini for dipping.
