Creamy Tomato Dill Soup
Ingredients:
130 g onion, diced
1 ½ litres canned diced tomatoes
500 ml vegetable stock
550 ml 35% cream
12 g fresh dill, chopped
Salt & pepper to taste
Olive oil for sautéing
Directions:
Sauté Onions: In a pot, drizzle some olive oil over medium heat. Add the diced onions and sauté for 3-4 minutes until they’re soft and translucent.
Combine Ingredients: Add the vegetable stock, canned diced tomatoes, and cream to the pot. Stir everything together.
Simmer: Bring the mixture to a boil, then reduce the heat and let it simmer on medium-low for 25-30 minutes, allowing the flavors to meld.
Blend: Use an immersion blender or a regular blender to puree the soup until smooth. Return it to the pot.
Add Dill: Stir in the chopped fresh dill and season with salt and pepper to taste.
Serve: Enjoy your creamy tomato soup hot, perfect paired with a grilled cheese sandwich!
