Creamy Tomato Dill Soup


Indulge in a bowl of comforting creamy tomato dill soup! This delightful dish perfectly balances the acidity of ripe tomatoes with the richness of cream, enhanced by a hint of fresh dill. Ingredients:

  • 130 g onion, diced

  • 1 ½ litres canned diced tomatoes

  • 500 ml vegetable stock

  • 550 ml 35% cream

  • 12 g fresh dill, chopped

  • Salt & pepper to taste

  • Olive oil for sautéing

Directions:

  1. Sauté Onions: In a pot, drizzle some olive oil over medium heat. Add the diced onions and sauté for 3-4 minutes until they’re soft and translucent.

  2. Combine Ingredients: Add the vegetable stock, canned diced tomatoes, and cream to the pot. Stir everything together.

  3. Simmer: Bring the mixture to a boil, then reduce the heat and let it simmer on medium-low for 25-30 minutes, allowing the flavors to meld.

  4. Blend: Use an immersion blender or a regular blender to puree the soup until smooth. Return it to the pot.

  5. Add Dill: Stir in the chopped fresh dill and season with salt and pepper to taste.

  6. Serve: Enjoy your creamy tomato soup hot, perfect paired with a grilled cheese sandwich!
