Bruschetta Baked Brie


Bruschetta baked brie is a flavourful appetizer that combines the creamy richness of brie cheese with the fresh vibrant flavours of traditional bruschetta toppings. Served warm, it’s often accompanied by crispy crostini or sliced baguette, perfect for dipping and scooping up the delicious combination. The result is a warm, savory treat that’s both cozy and comforting, making it a crowd-pleaser at any gathering!


Ingredients:

  • 170g brie wheel

  • 5g roasted garlic

  • 280g cherry tomatoes

  • 6g fresh basil, chiffonade

  • 1 oz balsamic glaze

  • 1 oz olive oil (plus extra for baguette)

  • Salt & pepper to taste

  • Baguette

Directions:

  1. Blister the Tomatoes:

    • Preheat the broiler and place cherry tomatoes on a baking sheet. Drizzle with olive oil and broil until skins split and tomatoes soften. Set aside.

  2. Bake the Brie:

    • Preheat the oven to 400°F (200°C). Score the top of the brie with a knife and place it in a brie baker. Bake for 15-20 minutes until melted.

  3. Make the Bruschetta Mix:

    • In a bowl, combine 1 oz olive oil with roasted garlic. Add blistered tomatoes, chiffonade basil, balsamic glaze, salt, and pepper. Mix well and set aside.

  4. Toast the Baguette:

    • Slice the baguette, drizzle with olive oil, and place on a baking sheet. Toast in the oven until lightly golden.

  5. Assemble and Serve:

    • Once the brie is melted, remove from the oven and top with the bruschetta mixture. Drizzle with additional balsamic glaze. Serve with toasted baguette slices.
