Chicken in Coffee Sauce


The combination of coffee, wine, and garlic will create a rich, savoury sauce that perfectly complements the chicken giving it a fully balanced flavour!


Ingredients:

  • 60g butter

  • 800g boneless, skinless chicken breasts, diced

  • ¼ tsp chili pepper flakes

  • 15g garlic, minced

  • 1 bay leaf

  • 100ml coffee

  • 200ml white wine

  • 1 ½ tsp instant coffee powder

  • 100ml heavy cream

  • 1 tbsp sugar

  • Salt & pepper, to taste

  • Green onions, for garnish

Directions:

  1. Cook the Chicken: Melt butter in a large pan over medium heat. Add diced chicken and cook until halfway done. Sprinkle in chili flakes, minced garlic, and add the bay leaf. Sauté for a couple of minutes to infuse the flavors. Remove chicken from the pan and set aside.

  2. Make the Sauce: In the same pan, pour in the coffee and white wine. Bring to a simmer and cook until the liquid reduces by half, about 5-7 minutes.

  3. Add Coffee and Cream: Stir in the instant coffee powder, heavy cream, and sugar. Mix well to combine.

  4. Simmer the Chicken: Return the chicken to the pan. Cook on low heat for 10-15 minutes, or until the chicken is fully cooked and tender, allowing it to absorb the sauce.

  5. Season and Serve: Taste the sauce and adjust salt and pepper. Garnish with chopped green onions for a fresh, crisp finish. Serve with your favourite rice.
