Chicken in Coffee Sauce
Ingredients:
60gr butter
800g chicken breasts, boneless, skinless- diced large
¼ tsp chili pepper flakes
15gr garlic
1 bay leaf
100ml coffee
200ml white wine
1 ½ tsp instant coffee powder
100ml heavy cream
1 tbsp sugar
Salt & Pepper to taste
Green onion, garnish
Directions:
1. Fry chicken in a pan with melted butter, add chili flakes, garlic, bay leaf and saute. When chicken is halfway cooked remove from the pan and set aside.
2. Add coffee and wine, reduce by ½.
3. Add in coffee powder, cream and sugar. Mix well.
4. Add chicken back to pan and cook on low heat until chicken is cooked through.
5. Adjust seasonings and garnish with green onions.
6. Serve with your favourite rice.
