Chicken in Coffee Sauce
The combination of coffee, wine, and garlic will create a rich, savoury sauce that perfectly complements the chicken giving it a fully balanced flavour!
Ingredients:
60g butter
800g boneless, skinless chicken breasts, diced
¼ tsp chili pepper flakes
15g garlic, minced
1 bay leaf
100ml coffee
200ml white wine
1 ½ tsp instant coffee powder
100ml heavy cream
1 tbsp sugar
Salt & pepper, to taste
Green onions, for garnish
Directions:
Cook the Chicken: Melt butter in a large pan over medium heat. Add diced chicken and cook until halfway done. Sprinkle in chili flakes, minced garlic, and add the bay leaf. Sauté for a couple of minutes to infuse the flavors. Remove chicken from the pan and set aside.
Make the Sauce: In the same pan, pour in the coffee and white wine. Bring to a simmer and cook until the liquid reduces by half, about 5-7 minutes.
Add Coffee and Cream: Stir in the instant coffee powder, heavy cream, and sugar. Mix well to combine.
Simmer the Chicken: Return the chicken to the pan. Cook on low heat for 10-15 minutes, or until the chicken is fully cooked and tender, allowing it to absorb the sauce.
Season and Serve: Taste the sauce and adjust salt and pepper. Garnish with chopped green onions for a fresh, crisp finish. Serve with your favourite rice.
