Beef Barley Soup
This hearty soup is filled with tender beef, veggies, and barley. It’s the ultimate cozy soup, warming you from the inside out and leaving you feeling satisfied! Perfect on a chilly day for lunch or dinner with crusty bread on the side.
Ingredients:
1 1/2 lb beef, large diced
8 oz carrots, medium diced
5 oz onion, medium diced
6 oz celery, medium diced
12 oz uncooked barley
3 liters beef stock
2 bay leaves
1 tsp fresh thyme
1 tsp rosemary
Salt and pepper, to taste
Oil, for sautéing
Directions:
Sauté Vegetables:
In a large pot over medium heat, drizzle a little oil and add the onion, carrots, and celery.
Sauté for a few minutes until they begin to soften.
Brown the Beef:
Add the beef to the pot, stirring occasionally, until the beef starts to brown.
Add Barley and Herbs:
Stir in the uncooked barley, thyme, rosemary, and bay leaves.
Simmer:
Add the beef stock and bring the soup to a boil.
Reduce heat and let it cook until the barley is tender and the flavors are well combined.
Season:
Season with salt and pepper to taste.
