Saskatoon Berry Lemon Scones

Ingredients:
6 cups flour
½ cup sugar
1 tsp salt
8 tsp baking powder
1 lemon (zested)
1 tsp lemon juice
1 cup cold butter, cubed
2 cups saskatoon berries (fresh or frozen)
2 ½ cups milk
Directions
Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Prepare Dry Ingredients: In a large bowl, combine the flour, sugar, salt, baking powder, and lemon zest. Whisk everything together to evenly mix the ingredients.
Incorporate Butter: Add the cold butter cubes to the flour mixture. Use your fingers (or a pastry cutter) to work the butter into the flour until the mixture resembles coarse crumbs.
Add Berries: Gently stir in the saskatoon berries. Be careful not to crush them too much!
Make Dough: Stir in the milk, adding just enough to bring the dough together. If the dough feels too dry, add a little more milk, a tablespoon at a time, until it holds together.
Knead and Shape: Turn the dough out onto a floured surface. Gently knead it 5-6 times to bring everything together, then shape it into a rectangular disc (about 1-1.5 inches thick).
Cut and Prepare for Baking: Cut the dough into about 16 triangles (you can adjust the size as needed). Place each scone on the prepared baking sheet. Brush the tops of the scones with a little milk to help them brown nicely.
Bake: Bake in the preheated oven for 20-25 minutes, or until the scones are golden on top.
Cool and Serve: Let the scones cool slightly before serving. Enjoy them warm with a bit of jam or clotted cream, or just as they are!
