Saskatoon Berry Lemon Scones
Ingredients:
6 cups flour
½ cup sugar
1 tsp salt
8 tsp baking powder
1 lemon - zested
1 tsp lemon juice
1 cup cold butter, cubes
2 cups saskatoon berries
2 ½ cups milk
Directions:
Preheat your oven to 375 F and line your baking sheet with parchment paper.
In a bowl combine flour, sugar, salt, baking powder and lemon zest. Whisk together to combine.
Add butter cubes to the flour mixture and use your fingers to combine the butter into the flour mixture until you get coarse crumbs. Add the berries to the flour mixture and stir gently.
Stir in milk until the dough just comes together. If you notice the dough is dry add in a little bit of milk.
Take the dough out of the bowl onto a floured surface and knead gently, 5-6 times and then shape the dough into a rectangular disc. Cut the dough into about 16 triangles, depending on the size you want your scones you can have less or more pieces. After cutting, place each scone on the parchment-lined baking sheet. Brush the tops of each scone with a little bit of milk and then bake in the oven for 20-25 minutes until golden on top.
