Coffee Cake


A soft, cinnamon-layered cake that’s the perfect treat to pair with your favorite cup of coffee or tea!


Ingredients:

For the Loaf:

  • ½ cup shortening

  • 1 cup white sugar

  • 2 eggs

  • 2 cups flour

  • ½ tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 cup buttermilk

For the Cinnamon Mix:

  • 3 tbsp white sugar

  • 2 tbsp cinnamon

Directions:

  1. Prepare the Cinnamon Mix:

    • In a small bowl, combine the sugar and cinnamon. Set aside.

  2. Make the Batter:

    • In a mixing bowl, cream together the shortening and sugar until light and fluffy.

    • Beat in the eggs one at a time until fully incorporated.

    • Gradually add in the flour, baking soda, baking powder, and salt. Mix until combined.

    • Slowly pour in the buttermilk and mix until the batter is smooth.

  3. Layer the Loaf:

    • Grease a loaf pan. Pour ⅓ of the batter into the pan and smooth it out.

    • Sprinkle ⅓ of the cinnamon-sugar mixture evenly on top.

    • Repeat the layering process, ending with the cinnamon-sugar mix on top. (You may not need all the cinnamon sugar, depending on your preference.)

  4. Bake:

    • Bake in a preheated oven at 350°F (175°C) for 45-55 minutes.

    • The loaf is done when a toothpick or skewer inserted in the center comes out clean.

  5. Cool and Serve:

    • Let the loaf cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

    • Slice and enjoy with your favorite coffee or tea!
