Coffee Cake
Ingredients:
For the Loaf:
½ cup shortening
1 cup white sugar
2 eggs
2 cups flour
½ tsp baking soda
½ tsp baking powder
½ tsp salt
1 cup buttermilk
For the Cinnamon Mix:
3 tbsp white sugar
2 tbsp cinnamon
Directions:
Prepare the Cinnamon Mix:
In a small bowl, combine the sugar and cinnamon. Set aside.
Make the Batter:
In a mixing bowl, cream together the shortening and sugar until light and fluffy.
Beat in the eggs one at a time until fully incorporated.
Gradually add in the flour, baking soda, baking powder, and salt. Mix until combined.
Slowly pour in the buttermilk and mix until the batter is smooth.
Layer the Loaf:
Grease a loaf pan. Pour ⅓ of the batter into the pan and smooth it out.
Sprinkle ⅓ of the cinnamon-sugar mixture evenly on top.
Repeat the layering process, ending with the cinnamon-sugar mix on top. (You may not need all the cinnamon sugar, depending on your preference.)
Bake:
Bake in a preheated oven at 350°F (175°C) for 45-55 minutes.
The loaf is done when a toothpick or skewer inserted in the center comes out clean.
Cool and Serve:
Let the loaf cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
Slice and enjoy with your favorite coffee or tea!
