Banana Coconut Loaf
Ingredients:
½ cup unsalted butter
1 cup sugar
2 eggs
¼ tsp salt
1 tsp baking soda
2 cups flour
4 bananas, mashed
¾ cup sweetened coconut flakes
¼ cup icing sugar
1 tsp water
Toasted coconut (for garnish)
Directions:
Prepare the Batter:
In a mixing bowl, cream together the butter and sugar until light and fluffy.
Beat in the eggs, one at a time, until well incorporated.
Stir in the mashed bananas and sweetened coconut flakes.
Incorporate Dry Ingredients:
Gradually add the salt, baking soda, and flour to the wet ingredients. Mix until everything is evenly combined.
Bake the Loaf:
Pour the batter into a greased loaf pan.
Bake in a preheated oven at 350°F (175°C) for about 1 hour, or until a skewer inserted into the center comes out clean.
Cool the Loaf:
Remove the loaf from the oven and let it cool in the pan for 10-15 minutes.
Transfer the loaf to a cooling rack and allow it to cool completely before glazing.
Prepare the Glaze:
In a small bowl, whisk together the icing sugar and water until smooth. Adjust consistency as needed by adding more water for a thinner glaze or more icing sugar for a thicker one.
Decorate and Serve:
Drizzle the cooled loaf with the glaze and sprinkle toasted coconut on top
