Banana Coconut Loaf


A moist and flavorful Banana Coconut Loaf that combines two of our favorite ingredients! Perfect for breakfast, a snack, or dessert, this loaf is a delightful treat any time of day!


Ingredients:

  • ½ cup unsalted butter

  • 1 cup sugar

  • 2 eggs

  • ¼ tsp salt

  • 1 tsp baking soda

  • 2 cups flour 

  • 4 bananas, mashed

  • ¾ cup sweetened coconut flakes

  • ¼ cup icing sugar

  • 1 tsp water

  • Toasted coconut (for garnish)

Directions:

  1. Prepare the Batter:

    • In a mixing bowl, cream together the butter and sugar until light and fluffy.

    • Beat in the eggs, one at a time, until well incorporated.

    • Stir in the mashed bananas and sweetened coconut flakes.

  2. Incorporate Dry Ingredients:

    • Gradually add the salt, baking soda, and flour to the wet ingredients. Mix until everything is evenly combined.

  3. Bake the Loaf:

    • Pour the batter into a greased loaf pan.

    • Bake in a preheated oven at 350°F (175°C) for about 1 hour, or until a skewer inserted into the center comes out clean.

  4. Cool the Loaf:

    • Remove the loaf from the oven and let it cool in the pan for 10-15 minutes.

    • Transfer the loaf to a cooling rack and allow it to cool completely before glazing.

  5. Prepare the Glaze:

    • In a small bowl, whisk together the icing sugar and water until smooth. Adjust consistency as needed by adding more water for a thinner glaze or more icing sugar for a thicker one.

  6. Decorate and Serve:

    • Drizzle the cooled loaf with the glaze and sprinkle toasted coconut on top
