Strawberry Mojito Baked Brie
Indulge in the perfect combination of creamy warm brie, and the bright refreshing flavours of a strawberry mojito. Paired with golden toasted baguette slices, each bite is a perfect blend!
Ingredients:
3 oz diced fresh strawberries
4 mint leaves, chiffonade (thinly sliced)
1 tbsp rum
1 tsp brown sugar
2 tsp lime juice
200g wheel of brie
Baguette, sliced
Olive oil
Directions:
Prepare the Brie:
Preheat the oven to 400°F (200°C).
Score the top of the brie in a crisscross pattern and place it in a brie baker or a small ovenproof dish.
Bake for 15-20 minutes, or until the brie is soft and gooey.
Make the Mojito Topping:
In a small pan on medium heat, combine the brown sugar and rum. Stir until the sugar completely dissolves, and take off the heat.
In a separate dish, mix the diced strawberries, rum sugar mixture, lime juice, and mint. Stir everything together and set aside.
Prepare the Baguette:
Drizzle the baguette slices with olive oil and toast them in the oven until they’re lightly golden.
Assemble and Serve:
Once the brie is out of the oven, top it with the strawberry mojito mixture.
Serve immediately with the toasted baguette slices for dipping.
