Sopa de Camarones (Shrimp Soup)


Warm up with this delicious hearty homemade shrimp soup!


Ingredients:

  • 3 tbsp butter

  • 4 oz red bell pepper, diced

  • 6 oz onion, diced

  • 6 oz celery sticks, diced

  • 10 oz carrots, diced

  • 1 ½ lb shrimp, peeled and deveined

  • 1 tbsp garlic, minced

  • 12 oz tomato, diced

  • 14 oz potato, diced

  • 8 cups chicken broth

  • ½ cup heavy whipping cream

  • Salt and pepper, to taste

  • Fresh cilantro, for garnish

  • Lemon wedges, for garnish

Directions:

  1. Sauté the Vegetables: In a large pot, melt the butter over medium-high heat. Add the diced onion, celery, bell pepper, carrots, and garlic. Sauté for about 2 minutes, until the vegetables begin to soften and the garlic becomes fragrant.

  2. Simmer the Soup: Add the chicken broth, salt, and pepper. Bring to a boil. Add the diced potatoes, then cover the pot, reduce the heat to medium, and cook for about 10 minutes, or until the potatoes and vegetables are tender.

  3. Cook the Shrimp: Add the shrimp and diced tomatoes to the pot. Bring the soup back to a boil and cook until the shrimp are pink and cooked through, about 3-4 minutes.

  4. Finish the Soup: Stir in the heavy cream and adjust the seasoning with salt and pepper as needed.

  5. Serve: Ladle the soup into bowls and garnish with fresh cilantro and lemon wedges. Serve hot and enjoy!
