Sopa de Camarones (Shrimp Soup)
Ingredients:
3 tbsp butter
4oz red bell pepper, diced
6oz onion, diced
6oz celery sticks, diced
10oz carrots, diced
1 ½ lb shrimp, peeled - deveined
1 tbsp garlic minced
12oz tomato, diced
14oz potato, diced
8 cups chicken broth
½ cup heavy whipping cream
Salt and pepper to taste
Cilantro - garnish
Lemon wedges - garnish
Directions:
In a large pot, heat the butter on high heat. Add onion, celery, bell pepper, carrots, garlic, and saute for about 2 minutes.
Add chicken broth, salt and pepper, and bring to a boil. Add the potatoes, cover and reduce heat to medium, and cook for about 10 minutes until vegetables are tender.
Add shrimp and tomatoes in, bring to a boil when shrimp is cooked and add cream.
Adjust seasonings if necessary. Garnish with some cilantro and lemon wedges.
