Sopa de Camarones (Shrimp Soup)
Warm up with this delicious hearty homemade shrimp soup!
Ingredients:
3 tbsp butter
4 oz red bell pepper, diced
6 oz onion, diced
6 oz celery sticks, diced
10 oz carrots, diced
1 ½ lb shrimp, peeled and deveined
1 tbsp garlic, minced
12 oz tomato, diced
14 oz potato, diced
8 cups chicken broth
½ cup heavy whipping cream
Salt and pepper, to taste
Fresh cilantro, for garnish
Lemon wedges, for garnish
Directions:
Sauté the Vegetables: In a large pot, melt the butter over medium-high heat. Add the diced onion, celery, bell pepper, carrots, and garlic. Sauté for about 2 minutes, until the vegetables begin to soften and the garlic becomes fragrant.
Simmer the Soup: Add the chicken broth, salt, and pepper. Bring to a boil. Add the diced potatoes, then cover the pot, reduce the heat to medium, and cook for about 10 minutes, or until the potatoes and vegetables are tender.
Cook the Shrimp: Add the shrimp and diced tomatoes to the pot. Bring the soup back to a boil and cook until the shrimp are pink and cooked through, about 3-4 minutes.
Finish the Soup: Stir in the heavy cream and adjust the seasoning with salt and pepper as needed.
Serve: Ladle the soup into bowls and garnish with fresh cilantro and lemon wedges. Serve hot and enjoy!
