Sopa de Camarones (Shrimp Soup)


Warm up with this delicious hearty homemade shrimp soup!


Ingredients:

  • 3 tbsp butter
  • 4oz red bell pepper, diced
  • 6oz onion, diced
  • 6oz celery sticks, diced
  • 10oz carrots, diced
  • 1 ½ lb shrimp, peeled - deveined
  • 1 tbsp garlic minced
  • 12oz tomato, diced
  • 14oz potato, diced
  • 8 cups chicken broth
  • ½ cup heavy whipping cream
  • Salt and pepper to taste
  • Cilantro - garnish 
  • Lemon wedges - garnish 

Directions:

  1. In a large pot, heat the butter on high heat.  Add onion, celery, bell pepper, carrots, garlic, and saute for about 2 minutes.
  2. Add chicken broth, salt and pepper, and bring to a boil.  Add the potatoes, cover and reduce heat to medium, and cook for about 10 minutes until vegetables are tender.
  3. Add shrimp and tomatoes in, bring to a boil when shrimp is cooked and add cream.
  4. Adjust seasonings if necessary.  Garnish with some cilantro and lemon wedges.
