Ingredients:

  • 170gr brie wheel

  • 3 oz Spanish onion, small dice

  • 6 oz Granny Smith apple, small dice (about 2 apples)

  • 2 oz brown sugar

  • 2 tsp balsamic vinegar

  • ¼ tsp fresh thyme

  • ½ cup water

  • Vegetable oil (for sautéing)

  • Baguette (for serving)

Directions:

  1. Sauté the Onions: In a pan, drizzle a little vegetable oil and add the diced Spanish onion. Sauté over medium heat until soft and golden brown, about 5-7 minutes.

  2. Cook the Apples: Add the diced Granny Smith apples, water, brown sugar, and fresh thyme to the pan. Stir well and cook over medium heat until the apples become soft and caramelized, about 10-12 minutes. Continue cooking until most of the liquid evaporates.

  3. Add Balsamic Vinegar: Once the water has evaporated and the apples are tender, stir in the balsamic vinegar and cook for another 2-3 minutes, allowing the flavors to meld and the mixture to thicken slightly.

  4. Bake the Brie: While the apple mixture is cooking, preheat your oven to 400°F (200°C). Place the Brie in a brie baker or a small oven-safe dish and bake for 15-20 minutes, or until the cheese is melted and gooey.

  5. Assemble and Serve: Once the Brie is melted and bubbling, remove it from the oven. Spoon the caramelized apple and onion mixture generously over the top of the Brie. Serve immediately with slices of toasted baguette for dipping.
