Kniddelen


Kniddelen are luxembourg’s most popular dumpling dish, consisting of soft pillowy dumplings with a creamy bacon sauce and fresh herbs!

A sure comfort food and one you will be craving after the first bite.


Ingredients:

  • 250g flour

  • 1 tsp salt

  • 2 eggs

  • ½ cup milk

  • 8g butter

  • 6 oz bacon, diced

  • ¾ cup cream

  • Salt & pepper, to taste

  • Fresh parsley, chopped

  • Fresh chives, chopped

Directions:

  1. Make the Batter: In a large bowl, combine the flour and salt. Whisk in the eggs and milk to form a thick batter. Continue whisking until smooth and free of lumps. Cover the bowl and let the batter rest at room temperature for 30 minutes.

  2. Prepare the Water: Bring a large pot of salted water to a boil.

  3. Cook the Dumplings: Drop teaspoon-sized portions of batter into the boiling water, stirring gently to prevent them from sticking. It’s best to cook the dumplings in batches to avoid overcrowding the pot. Boil until the dumplings rise to the surface and are tender, about 3-4 minutes. Remove them with a slotted spoon and transfer to a bowl. Repeat until all the batter is used.

  4. Cook the Bacon: In a large pan, cook the diced bacon over medium heat until crispy. Remove the bacon from the pan and drain on a paper towel-lined plate.

  5. Make the Sauce: In the same pan, add butter and cream. Bring to a boil, then add the cooked bacon back into the pan. Season with salt and pepper, reduce heat, and let the sauce simmer until it thickens slightly, about 3-5 minutes.

  6. Combine: Once all the dumplings are cooked, add them to the sauce. Stir gently to coat the dumplings in the creamy bacon sauce.

  7. Finish and Serve: Sprinkle with freshly chopped parsley and chives before serving. Enjoy!
